T.I.P of the Week- 5/8
Hi everyone! We know that we have been a little M.I.A. recently, with school, work and planning Taylre’s wedding, we have been pretty busy! But, we are back to a more consistent schedule again so be on the look out for more posts! To start things back up again, we have a great recipe for you this week. Taylre’s Baked Oatmeal Bars! These bars are super healthy but still taste like you are eating a yummy treat. We like to bake them on Sunday’s, then store them in the fridge and eat them throughout the week. They are perfect for if you are running late and just need a quick “pick-me-up” before you head out the door. You can’t go wrong with these delicious bars!
Baked Oatmeal Bars
Servings: 6 Bars
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Ingredients:
- 1 c quick oats
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 c preferred milk (I use almond milk)
- 1 egg
- 1 tsp vanilla
- 1/4 c peanut butter + 2 Tbsp for drizzle
- 2 ripe bananas
- Handful of chocolate chips
Directions:
- Preheat oven to 350 degrees F. Grease a loaf pan.
- Stir together the quick oats, baking powder, cinnamon and salt in a large bowl.
- Next, add milk, egg, vanilla and peanut butter to oat mixture. Stir to combine.
- Mash one banana and fold into the oat mixture. Slice the remaining banana into small slices.
- Place half of the sliced banana on the bottom of the greased baking dish. Spread half of the oatmeal mixture over the sliced bananas, using a spatula to spread evenly. Place the remaining banana slices on top of the oatmeal mixture. Pour the remaining oatmeal mixture over the second layer of banana slices. Spread out mixture with a spatula to even cover bananas. Top with a handful of chocolate chips.
- Place in the oven and bake for 30 minutes or until a toothpick comes out clean.
- Once bars are done baking, drizzle with remaining melted peanut butter.
- Cut evenly into 6 bars.
