Ingredients:
- 1 cup of room temperature salted butter (2 sticks)
- 1 cup brown sugar
- 1 cup white sugar
- 1 can of 100% pure pumpkin (15 oz.)
- 2 tsp. pure vanilla extract
- 5 cups of all purpose flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. pumpkin pie spice
- 1/4 tsp. nutmeg
- A pinch of salt
- 1 1/2 cups of chocolate chunks
- 1 cup mini marshmallows
Directions:
- Preheat oven to 375.
- In a large mixing bowl cream together butter, brown sugar, and sugar.
- Mix in the pumpkin and the vanilla.
- Add the flour, baking soda, baking powder, cinnamon, nutmeg, pumpkin pie spice and salt. Mix together with a stand mixer.
- Fold in the chocolate chunks and mini marshmallows, stir all together.
- Use a spoon to place the dough on baking sheets lined with parchment paper. Use your fingers to shape the cookies.
- Bake the cookies for about 10 minutes.
- Remove the cookies from the oven when the bottom of the cookie has turned golden brown.
- Place the cookies on cooling racks and allow to cool completely.
- Store the cookies either in the fridge or at room temperature.
