Pumpkin S’mores Cookies

Ingredients:

  • 1 cup of room temperature salted butter (2 sticks)
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 can of 100% pure pumpkin (15 oz.)
  • 2 tsp. pure vanilla extract
  • 5 cups of all purpose flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 tsp. pumpkin pie spice
  • 1/4 tsp. nutmeg
  • A pinch of salt
  • 1 1/2 cups of chocolate chunks
  • 1 cup mini marshmallows

Directions:

  • Preheat oven to 375.
  • In a large mixing bowl cream together butter, brown sugar, and sugar.
  • Mix in the pumpkin and the vanilla.
  • Add the flour, baking soda, baking powder, cinnamon, nutmeg, pumpkin pie spice and salt. Mix together with a stand mixer.
  • Fold in the chocolate chunks and mini marshmallows, stir all together.
  • Use a spoon to place the dough on baking sheets lined with parchment paper. Use your fingers to shape the cookies.
  • Bake the cookies for about 10 minutes.
  • Remove the cookies from the oven when the bottom of the cookie has turned golden brown.
  • Place the cookies on cooling racks and allow to cool completely.
  • Store the cookies either in the fridge or at room temperature.
